We like Kentucky

Haven’t seen much of it, but we like it.

We awoke to pouring rain this morning with rain forecasted most of today, so… we decided to just stay put for another today.   Pulling the Q in the rain is very tiring.

Can you believe that I was up at 6:00 AM?!!  Don couldn’t.  I also had pancakes ready when he got finished with his shower.  He’s decided he likes Kentucky. ;-)

Since it has rained almost all day, I spend most of the day on the computer creating our itinerary for the next four weeks.  We have a plan.

This afternoon, the rain stopped and most of the clouds were gone, so we got out and walked around.  I took another picture of “park barn.”  I would love to see inside.  It is tall enough to have a second floor or loft.100_3698

Continuing on our walk, look what we found!!  A ladder golf game.100_3702

Don beat me 9 – 7.  He got tired, conveniently while he was ahead!  The temp was nice; about 80 degrees, but humidity very high, so it didn’t take much activity to work up a sweat.100_3701-1

I don’t know what these are, but the tree is covered.  Looks like maybe a weeping cherry tree, but I’m not sure. 100_3706

Nearby  was another tree covered in these berries or fruit.100_3709

When we got back to the Q, there was a butterfly convention going on in the driveway.  It’s so hard to get good pictures of butterflies because they flutter by so quickly and don’t light for very long.  I thoroughly enjoyed sitting on the picnic table taking these pictures.  Since it rained, I think they are drinking water out of the ground.100_3711100_3714100_3716100_3717100_3723100_3725

OH MY.  Today, Don cooked an        

Outstanding Pot Roast

Spray crock pot with Pam.

Add:

(we were out of potatoes… so plan B)
1/2 Vidalia onion - chopped
carrot sticks - to your liking

On top of onion and carrots place:
one medium beef roast sprinkled with seasoned salt
1/2 cup of water
1 beef bouillon cube

Cook in covered crock pot on high until almost done.

Cover roast with one small jar (or half of medium size jar) of medium Picante sauce (salsa).

Continue to cook roast until done and tender. Remove roast and carrots from crock pot.

Rue: 
2 T. flour; water; 1 T. peanut butter
Add rue to juice and cook until only thin-thick
Return carrots to sauce/gravy.

Serve over your choice of rice.

Don also served Duchess brand extra long tender green asparagus spears (imported from Peru by Royal Food Import Company, Boston, MA – find them, they are excellent) and fresh cucumber/tomato/Vidalia onion salad in tangy Italian dressing.

For a potato girl to say, “I am so glad we had to go to plan B,” you know that this meal was OUTSTANDING.  The flavors were so amazing and complimented each other so well.  Can I use the word “so” any more????100_3727

Mama Trudy called me tonight.  She’s doing pretty good.  Feels better tonight than she did this morning, but she kept going.  Walked across the parking lot to visit with her friend, Iola… sweet, sweet lady who just loves mama… feeling is mutual.   Your prayers are appreciated, greatly.  God is faithful, as always and always will be.

I will have to let Linda know about the recipe. Looks like the plating is from a higher end resteraunt! Looks great and the butterflies, you have some excellent pictures of them....I am going to try the anonymous...Joel
