Before leaving Norman, we visited Don's Aunt Bernice and Uncle Eddy. Uncle Eddy is suffering greatly with COPD. We appreciate your prayers for them. Seventeen year old granddaughter, Kristina: "I just love it when ya'll come to see us. Mama fixes a really good meal with dessert and everything. I'm excited about dinner tonight!"
And feast it was! If you've had 'Slumgullion,' you've missed out big time. It consist of sliced yellow squash, okra, potatoes, onions, salt, pepper and coated with cornmeal and pan fried to crisp tenderness. Serve that with beef stroganoff that has been cooking all day in the crock pot and sliced fresh tomatoes.... ymmmm-dilly-ish-ous! And the dessert was a delicious work of layered art: pecan mixture crust, cheese cake, chocolate pudding, whipped cream (or Cool Whip), chopped pecans and chocolate chunks on top. Heavenly. Daughter has inherited her dad's love and talent of cooking. Thanks again, Stephanie, for your hospitality and the wonderful meal.
Don was happy to get to watch Monday Night Football and after some stressful moments, watched his favorite team eek out a "W."
Thanks, Kristina, for giving up your bedroom for us. We slept very well and awoke refreshed and renewed.
I am now caught up!
As I type, we are headed NE on I-44 toward Vinita, OK where we will exit and take a tour of Grand Lake, which I have never seen. From there Don wants to go over to Neosho, Missouri and then make our way to Branson from there. At Grand Lake, there were a bunch of these big birds that looked like pelicans. Not sure if they were or not.
