Don made an amazing dish tonight and he called them Zucchini Boats.
- One large zucchini, halved & cored
- Chopped bell pepper, green, red & yellow (we get them really cheap at the local market)
- Chopped onion
- Chopped zucchini middle
- Salt and pepper
- 1 1/2 Italian sausage links
- 1/4 cup Spaghetti sauce
- Parmesan cheese, grated
- Mozzarella cheese, grated
Season empty “boat” and bake at 350 degrees (why doesn’t my keyboard have that little degree symbol?) for about 10-12 minutes.
Brown crumbled Italian sausage in skillet in a little olive oil until done. Drain excess oil.
Add chopped veggies to sausage and sauté.
Add 1/4 cup of spaghetti sauce to mixture.
Fill each “boat” with veggie/sausage mixture, top with grated cheeses and bake until cheese is melted and golden brown.
Serve this wonderful meal in a boat, hot.
Serves two.
Next time, Don says he will experiment with Turkey Italian sausage. This was so good, I hesitate to let him change it, but turkey sausage would be less fat, even though most of the fat was drained off.
